The original Japanese-Mexican fusion since 1994—30 years of Chef Carbajal reinventing the form. Nicksan invented the Japanese-Mexican style in Los Cabos in 1994 and has been perfecting it ever since. Chef Ángel Carbajal blends Japanese technique with local Baja ingredients—think tuna tostadas, nigiri with local catch, and sashimi finished with Mexican chili heat. Frommer's three-starred, it's the city's most legendary sushi address. The Marina location is the original; expect a peaceful atmosphere (management kindly discourages noisy children) and a menu that has influenced a generation of Los Cabos chefs.
